Kolay Patlıcanlı Börek (eggplant pie)
Burek / eggplant pie / balancani quickly and easily.
Preparation steps
- Prick the eggplant with a fork, wrap it in aluminum foil and bake in the oven for about 20 minutes at 200C. Peel a roasted eggplant, chop finely. You can see the procedure in this recipe.
- Put mineral water, milk, olive oil, grated feta cheese (or plain fresh), chopped parsley and grated cheese in a bowl and add eggs. Beat everything well with a wire. Add salt and steam as desired.
- Cut the noodles into cubes. Add finely chopped eggplant to the mixture, add sliced noodles, stir. Pour into a baking dish, which you previously lightly greased with oil and sprinkled with bread crumbs, then bake for about 40 minutes in an oven preheated to 200C
Serving
Serve hot or cold.
