Why it's called that, I wouldn't know to tell you, but the recipe has been in our family for a very long time.

Preparation steps

  • Beat 8 egg whites and 250 g of sugar and add 100 g of ground walnuts and 100 g of chopped walnuts.
  • Spread the wafers from the wafers individually with this filling and bake each one individually on an overturned baking sheet at a moderate temperature until slightly browned.
  • Filling: Whisk 8 egg yolks with 150 g of sugar and cook on steam, when it is thick enough, add 100 g of chocolate and coffee and stir until it melts, add whipped butter with a little lemon juice and grated rind and stir again.
  • Spread this mixture on each wafer crust, over the baked egg whites, leave a little of this filling to coat the fifth crust, put the fifth crust on top and press well so that the wafers stick together and then coat it with brown filling on top and sprinkle with ground walnuts.
  • Cut on the bars
  • Pleasant !!!!
