Khrushchev's dough
I have known about this type of test for a long time, but I can't make it and try it. Everything we learned about the test here is the opposite ... otherwise it is not difficult to do and most importantly, do it the night before.
Preparation steps
- If you use dry yeast, put 10 g of dry yeast, 10 g of salt and mix everything well and add 30 ml of water and combine everything together. If you use fresh yeast, add 10 g of salt and mix this mass together with a spoon until the yeast turns into a liquid. Since we know that they "kill" yeast, double the amount of yeast is put here for that reason, and don't be afraid, you won't feel the yeast or the acidity of the dough because of that large amount of yeast. In this recipe, cold ingredients are used, which we usually put warm ingredients in the dough, which makes the dough grow in a warm place, here it is in the fridge ....
- Pour the milk directly from the fridge over the melted yeast, soften the butter, a spoonful of sugar and sift the flour over all these ingredients. Knead the dough with a food processor or mixer (for me it's a mixer) and when everything is combined, cover the dough with plastic wrap and put it in the fridge overnight to rise ... in the original recipe someone says that the dough rises someone does not, to me the dough has risen but not like ordinary dough would grow, because butter also contributes to that, which hardens when cooled, but don't worry, you'll get great pastries.
- The next day (and the dough can stand for several days in the refrigerator), take out the dough, flour the work surface and roll it immediately. I divided my dough in half, while I melted one half, I left the other part in the fridge. Spread the dough in a circle, about 3mm thick, cut into as many pieces as you want, fill as desired, can with cheese, cheese and spinach, we have cheese and turkey sausage and wrapped in rolls or rolls and can be made sweet with nutella, jam,
- I am making this dough for the first time, but as far as I saw in the recipe, it says that the dough can be frozen and when you need to take it out of the freezer, leave it in the fridge overnight to thaw and use it the next day.
- Arrange the made rolls on a baking sheet, which you have covered with baking paper, and leave enough space in between because they will still grow during baking.
