Keto Karidopita
Greek pie with walnuts topped with syrup in Keto and LCHF version.
Preparation steps
- The syrup is prepared first. One small lily 1/2 larger lemon cut into slices and put in a bowl together with 400 ml of water. Add vanilla flavor, a teaspoon of gelatin and stevia and erythritol to the desired sweetness. Stir to dissolve the gelatin, and cook over low heat after boiling for about 5 minutes. Leave to cool and then take out the lemon slices.
- Melt the butter in a refractory or metal pan over steam and leave to cool slightly. In a large bowl, mix eggs with butter, add lemon juice and, to the desired sweetness, stevia and erythritol ground in an electric coffee grinder. Mix and add a teaspoon of baking powder.
- Put the walnuts in a nylon bag and beat them with a meat mallet or chop them. Grind flax seeds in an electric coffee grinder. In a separate bowl, mix walnuts, flax seeds and cinnamon. Add spoon by spoon mixing at the lowest speed or mixing with a food processor.
- Grease a 16 x 23 cm baking tray or a 25 cm diameter mold with butter and pour the mixture. Bake in a preheated oven at 180 degrees for about 20 minutes. Check with a knife if it is baked. Prick the baked biscuit with a knife and lightly pour the syrup over it. Allow to cool to room temperature, then transfer the stake to the refrigerator. Cut a stake and decorate with halves or crushed walnuts if desired. Serve chilled.

I made according to this recipe where there is also a version with cream. In the original version it looks much better than in my photo. :)
