Spring soup from Finland :) This soup is usually made in the spring when there are fresh and young vegetables in the garden or at the market, this is the finest. Of course it can be made at any time. The ingredients are usually the ones that are in season, in the original recipe there is no corn or wig, instead a couple of cauliflower leaves go. The goal is to have a variety of colors in the white soup. It is best to eat this soup of beautiful colors outside in the garden, cold, with friends :-)

Preparation steps

  • Chop the vegetables into cubes or slices. I prefer longer snitice. Put everything on two tablespoons of butter and simmer for one minute. I put carrots and potatoes first and only then corn, peppers and broccoli. Add about a liter of water, salt and pepper. Cook for about 10 minutes. When the vegetables are soft, add milk with two tablespoons of flour. Let it boil only once. Serve with fresh coriander.
