Juicy plum cake
If you like juicy fruit cakes, you should try this cake. Mickey, my friend, thank you from the bottom of my heart for this phenomenal recipe.
Preparation steps
- Beat eggs, sugar and lemon-flavored vanilla sugar with a whisk (if you don't have that vanilla, add plain vanilla and lemon zest).
- Add melted butter to the whipped mixture and combine it all, and finally add flour, which you have mixed with baking powder.
- Grease a 20cm X 28cm refractory dish or tray (I use PAM baking spray) and pour in the whipped mixture.
- Plums, which you have washed and pitted, cut in half and arrange on top of the dough (plums will fall into the dough and during baking will drop their juices and make your cake very juicy).
- This cake doesn't have a lot of dough, if you want more dough in a fruit cake, double the ingredients for the dough and bake in a 22cm X 35cm mold. I personally prefer this way, and of course my friend Miki.
- Bake in a preheated oven at 195 * C for about 35 to 45 minutes or until finely browned, and the dough separates from the sides of the baking tray. Check with a fork whether the dough is baked.
- Cool the baked cake in a pan, cut it into cubes, sprinkle with powdered sugar, or, if desired, coat with whipped cream and serve with a glass of fine juice or a scoop of ice cream.
