Juicy burgers with zucchini and semolina

Preparation steps

  • zucchini if ​​they are young and homemade I never peel because the rind is full of vitamins. Grate the zucchini, pour over the scrambled eggs, add the semolina, flour, mixed with baking powder and baking soda. Spice in my mother's recipe says that the mixture "rests" for 15 minutes. case it is very difficult to form -shape burgers, no matter how much flour is added and the bite constantly seems to be needed more.
  • take the mixture with a larger kitchen spoon, this way it is much easier than when they are "dipped" in heated oil by hand and there is less chance that you will crumble.
  • fry the formed burgers at a moderate temperature, first on one side and then on the other side until nicely browned.
  • you can additionally dry them on kitchen paper, they are great both hot and cold and the next day they are even juicier and softer.

Serving

to taste, if your family likes (my husband does), finely chopped ham or some cheese can be added to the mixture if you like.
