Here is my dear version of my Japanese wind, I make it the way I like it the most, .....
Preparation steps
- whisk the egg whites, add sugar and whisk into a solid mass, add the other ingredients and mix only lightly with a spoon, bake in a round mold with a diameter of 28 cm, repeat the process once more, when the crusts cool cut them in half because they are thicker, so you get four bark.
- cook the egg yolk filling and add the margarine to the cooled one.
- whip the whipped cream with acidic water.
