Jam and walnut cake
I wrote a lot of my mom's recipes, here comes the turn for something from my dad. This recipe is over 35 years old, but I remember it as if today was when my dad made it, and as a child I was skeptical about how he would make a cake.Listing through my old recipes I came across a recipe a few weeks ago and I just had to make it because it reminds me of childhood and home.
Preparation steps
- Beat eggs well with sugar and vanilla. Add oil, buttermilk and jam and mix. Finally add flour, salt, baking powder and nuts and stir just enough to combine.
- Pour the prepared mixture into a greased pan measuring 30 x 26 cm. Sprinkle ground walnuts over the dough.
- Bake in a preheated oven at 180 degrees for 40-45 minutes or depending on the oven. Check with a toothpick if it is baked.
- Cool the finished cake a little, sprinkle with powdered sugar and cut into cubes.
