Istrian gnocchi
The gnocchi of my childhood
Preparation steps
- Peel the potatoes and put to boil in salted water (best red potatoes)
- Spread boiled potatoes with a kneader on a board and immediately add egg, barrel and flour. (do not leave the potatoes to cool)
- From these ingredients knead a smooth dough. From this dough we separate smaller pieces.
- ... which we roll out by hand into slightly longer, ie long rollers cc the thickness of a thumb, which are cut with a knife to a length cc 2 cm. While doing this, we must be careful that the dough does not stick to the work surface, so flour should be added.
- Put the gnocchi to boil in boiling water that we previously salted.
- When gnocchi come to the surface ... it's a sign that they're cooked.
Serving
Gnocchi can be served with various stews.
