Preparation steps

  • Gently soak the tortillas in cold water for a few seconds, then line them with 6 inverted ceramic bowls of smaller diameter, which you have previously lined with aluminum foil. Transfer the bowls to an oven preheated to 180 degrees for 10 minutes or until the nests are crispy and crispy. Turn off and allow to cool, then remove the foil from the baskets.
  • Beat the egg in a saucer and add a little salt. Pour the oil into a small Teflon pan, add a little chopped bacon, wait for it to fry, then add the egg. When the egg whites are fried, take them out and put them in the tortilla nest and keep them warm.
  • Continue this process until you have used up eggs and bacon. If you want to reduce the preparation time, fry them two by two. Before serving, garnish the eggs with very thinly sliced ​​smoked cheese, washed, wiped and chopped basil leaves and with plenty of freshly ground pepper.
