Preparation steps

  • Heat the milk over a low heat, then pour half (250 ml) into a bowl and add the crumbled yeast - mix until combined. Then add 150 g of flour and combine well. Cover with a cloth and leave at room temperature until the volume has doubled or tripled! About an hour.
  • Add eggs, butter, etc. to the risen dough - stir well to combine this first. Then add the rest of the milk, flour and finally the sugar. mix well and cover again with a cloth and let it rise again (30 min)
  • Grease the pan with oil and heat it well - bake on high heat! I greased the pan on every tenth pancake - and it didn't stick ... And you as you wish. The pancakes are baked on both sides until brown. While baking, they will grow. Put a little butter on each. Drizzle with honey.

Blini are very small fat pancakes. Before the beginning of Orthodoxy, blini were a symbol of the Sun, a rich harvest, a good marriage and healthy children. They were tied to a holiday celebrated on the eve of Lent. At that time, making a test was a sacred job.
