Huevos Rotos with Chorizo
or broken eggs :) with potatoes and sausage. A Spanish dish that is quick and easy to make, is always my choice for a delicious and quick dinner. They are also known as Huevos Estrellados and are usually served with sausage, prosciutto or hot peppers to taste. and your choice.
Preparation steps
- Diced potatoes, together with peppers, fry in olive oil until golden yellow. Season to taste. While the potatoes are frying in another pan, bake the sausages, or if you have decided on prosciutto, cut them into thin slices and heat them on both sides.
- When the potatoes are ready, spread the potatoes to make a round space and lightly break the eggs in those nests. Return to a medium-high temperature and bake so that the eggs remain soft.
Serving
Serve warm with sausages or ham, but be sure to pierce the egg yolks before serving to drain the potatoes.
