Honey caramels with the scent of sage
By failing to make one recipe, I got these semi-hard caramels with the scent of sage and the taste of honey and lemon.
Preparation steps
- Cook the sugar, juice of half a lemon and water at a lower temperature until the sugar crystals are completely melted but not caramelized.
- Add a tablespoon of honey (it is better not to add it at the beginning because sage honey is dark so you can't keep track of whether the sugar has started to caramelize)
- Allow to cool slightly
- When the mixture is so cold that it can be taken in your hands, gather everything from the pot with a spoon (because it will later become too hard) and stretch between your hands, then gather everything, then stretch again (like playing with chewing gum, or children with plasticine) ... stretch until lightened.
- Shape the sausage, flatten it a bit, flatten it, and cut the candies. It’s best to do it with that biggest knife.
- If too nice sprinkle a little powdered sugar

I actually tried a slightly changed version of the sugar paste for depilation ... but here are the resulting caramels :)
