Homemade hard cheese with vinegar
At the request of anke-1955, I am publishing this recipe, I don't have a picture because this is a cheese I made about 20 years ago when we had cows, so compare it with your recipes and wishes.
Preparation steps
- Heat the fresh milk to 89-99 degrees C with constant stirring.
- Remove from heat and add salt, stir, soothe.
- Add vinegar while stirring vigorously with a food processor, soothe.
- Heat again without stirring with a food processor to 88-98 degrees C (10-20 min) until whey appears. (If it does not separate, add more vinegar)
- Put the gauze on the strainer and tease it to strain for 10 min.
- Transfer to a mold and place the load.
