Homemade bread with buckwheat flour and bran

The starting recipe for me was the one for white bread that Jamie Oliver teaches his students to make ... and then I experimented a bit ... The first experiment turned out fantastic ... Here is a detailed recipe for bread that you will, I am convinced, if you once you do, do it often.

Preparation steps

  • Put the germ and sugar in 150 ml of lukewarm water for a few minutes to rise. Meanwhile, in a deep bowl, mix the flour, bran, buckwheat flour and salt ... add the germ, then add the rest of the lukewarm water (0.5 l). (You can also knead initially with a mixer with dough attachments). Transfer the dough to a floured surface and knead it with floury hands, as it is a bit sticky ... leave it on warm for at least half an hour to rise ... Knead it once more by hand and divide it into two parts to form into oblong loaves, put them in a greased pan, coat them on top with a silicone brush dipped in oil and cut on the surface with a sharp knife three oblique parallel lines on each loaf to bake the bread better ... Leave the bread to rest until the oven heats up to 200 degrees Celsius. .. Bake until it gets a golden-brown crust (minimum half an hour), turn off the oven, brush it with a wet brush to make the crust softer and yet crispy enough, then after a few minutes take it out of the oven and do not cut it immediately after baking, to cool down a bit. If you like an even softer crust, wrap the bread in a clean kitchen towel for fifteen minutes.
