Holiday roast
A simple and delicious roast that will satisfy even the most picky.
Preparation steps
- Wash and dry the meat and rub with salt. Pepper pound in the milk and rub into the meat on all sides. Place the meat in a baking dish, pour wine and stock over it, cover with foil and put in the oven at 250 degrees for 2.1 / 2 - 3 hours, occasionally pouring juices from the baking. Take the roasted meat out of the oven, wrap it in foil and let it rest for about 15 minutes.
- Meanwhile, make the sauce, drain the roasting juice and separate the fat. Take two tablespoons of the fat and fry the shallots, garlic and sliced mushrooms on it. Add chopped thyme and salt. Save the rest of the fat for Yorkshire pudding. Add flour to the stewed mushrooms and cook, stirring, for 1 min. then pour over the stock, baking juice and cream. Cook for 4-5 minutes. until the sauce thickens.
- Separate the aged meat from the ribs and cut into 1 cm slices. thicker or if you like you can and thicker. Serve with mashed potatoes, mushroom sauce and Yorkshire pudding.
