Hermits
Hermites are people who separated from the world for spiritual reasons, to live in a secluded, desolate place. Hermit in translation means "Hermit", and somewhere they are also known as "Hermit". An interesting fact is that cookies are named after the fact that they can be hidden for days, just like Hermiti, and still retain their aromatic taste and freshness. Some even say they are much tastier after a few days. The recipe is from America’s Test Kitchen magazine “Best-Ever Christmas Cookies”.
Preparation steps
- Combine flour, baking soda and salt in one bowl. Blend raisins, candied ginger (or orange) and rum to get a sticky thick mixture, like jam. Melt the butter over a low heat, then continue cooking until it gets a golden-brown color, be careful not to burn it!
- Add the mixture of raisins and all the spices to the butter, and mix everything well. Allow the mixture to cool, then add brown sugar, molasses and egg to the mixture. After you have combined everything, mix the flour mixture with a spatula. Put the prepared mixture in the refrigerator for an hour and a half.
- Preheat oven to 170C. Line two baking trays, size 30x40 cm, with baking paper. Divide the mixture into 4 parts. Make a long roller (about 30 cm long) from each part, then transfer it to the prepared pan (2 rollers in each pan).
- Bake for 15-20 min. The rollers will expand and collapse a lot during baking. The cookies should be dry on the outside, but the center should still remain soft. Cool the baked Hermite for about 5 minutes in a baking pan, then transfer it to the cooling wire with baking paper.
- After they have cooled completely, make a topping of powdered sugar and milk (or juice, with the addition of flavor if desired) and then pour (spoon) over the baked cake with a spoon. You can cut hermites into tiles or strips. PLEASANT !!!
