This time again, for little Jakob, to whom I dedicate this cake.

Preparation steps

  • Before you start preparing the cake, prepare a slice of paper, which consists of 6 parts, of different sizes. The first time I made it, I got a slice, this time I made it myself from memory. Anyone with a little sense of tailoring will do this easily. In the pictures: a slice of 6 parts, stacked on top of each other.
  • Here it is shown how the cuts (patterns) are arranged in a tin. For the first time, I baked the biscuit in a stove, and then I cut the slice, or cut, over the biscuit and cut the pieces that way. This time I baked the biscuit from 2 times: once in a baking tray. 30 x 43 cm (of 8 eggs) and the second time in a tray size 22 x 33 cm (of 4 eggs). Once you have prepared the slices (patterns) and cut them out of baking paper, you can start making the cake. You can save these cuts and use them for the next cake.
  • Arranged cuts in another tray. Prepare almonds to decorate the hedgehog. You can also do this earlier. Pour hot water over almonds (almonds, almonds ...) and leave in it for five minutes. Strain and remove the membrane or shell with a simple pressure, the grain will just come out. Then each peeled grain, cut in half lengthwise, to get two halves. Put in the oven to dry a little: 10-15 minutes at 100 degrees C. Then, cut each half lengthwise into 3-4 parts, to get hedgehog thorns.
  • Prepare the biscuit: Whisk the egg whites well with the sugar (mixer), then lightly mix in the flour and nuts. put in a baking sheet on baking paper and simmer over medium heat for about twenty minutes. I made two biscuits: for a larger tray 30x43 cm of 8 eggs and for a smaller tray 22x33 cm of 4 eggs. Cool the biscuit.
  • Arrange the cuts over the baked biscuit so that there is as little waste as possible, and so that all the cuts are lined up. Cut the pieces with a knife.
  • Make the cream: Whisk the butter with the powdered sugar well, gradually add the egg yolks one by one and continue to stir. Finally, add the melted chocolate, slightly cooled and whisk well once more and equalize the ingredients. Put in the fridge to cool the cream a little more and tighten.
  • Filling the hedgehog. First put the largest part, coat with the filling, then the smaller part and coat again with the filling ... and so on until all the parts of the biscuit and all the filling are used up. Hedgehog should also be coated on the outside with filling.
  • Hedgehog also coat the outside of the whole with the filling.
  • Put the almond thorns that you have prepared earlier.
  • Put eyes and muzzle of raisins or canenberg
  • Hedgehog decoration according to your taste and dexterity. I baked a 3 egg biscuit and put a kiwi cake topping in green to make it look like grass. I let the topping tighten a bit and then put it on with a spoon to make it look uneven. You can make the stand from marzipan, and for decoration around it from dry leaves ...

Serving

For all those who find this complicated (it is not complicated at all, but the explanation is too extensive), he can make a hedgehog from cassava cake, pour chocolate glaze over it and put thorns.
