Gypsy beans

I've been working on this recipe for years since I wrote it in my folder, my mutica keeps various old cooking magazines, so that's where the recipe came from, I made a similar salad with coolka - Hungarian salad, I saw that there are a couple of gypsy bean recipes here this site but I have not compared them to this mine, so please do not offend anyone if someone has a similar recipe

Preparation steps

  • First we cook the beans. Put the onion on the heated oil for a few minutes so that it starts to wither slightly, then add the diced peppers and pepperoni and simmer for about 15 minutes, then add the diced tomato and simmer for another 15 minutes, then add the sugar. salt, pepper and vinegar, stir a little and add the beans and simmer lightly for another 15 minutes.
  • Then we fill the heated jars. I pour a little oil on the top just enough so that it doesn't spoil, the way our grandmothers used to do, and I close the lid of the jar well and turn it upside down for 3 minutes to create a vacuum and then I just listen to them. when they start jumping (that sound which means that they have cemented and that they have run out of air and will not spoil;))
