Preparation steps
- Knuckles from 1 smaller egg are enough for about 1.5 l of soup! Whisk the egg with a fork, add a tablespoon of fat. Also drain the fat with a fork and add a little salt.
- A minimum of 3 tablespoons of semolina goes into one egg. Mix with a fork, then stir with a spoon. Add minimal amounts of semolina as the mixture should not be thin or hard. If you need to boil the noodles in the soup immediately, try to separate one noodle with a spoon - if it remains in the spoon, or if the place where you took it out is outlined in the plate, then the hardness is good, and if you have time to cook, stand for 10-15 minutes as the semolina swells.
- Cook the noodles in the soup over low heat until the spoon gently passes through them (take one out on a plate and try to halve it)!
