Green gnocchi in white sauce
Spinach has decided to completely conquer us with its culinary combinations and the most diverse applications. It’s also great when you mix it into potato batter to get green gnocchi that go great with white sauce.
Preparation steps
- Wash the spinach and boil briefly. Drain it well and chop it in an electric chopper so that you get a pulpy mass. Put this mass in a strainer and press with a spoon to remove all the excess liquid.
- Boil the potatoes, peel them and let them cool.
- Squeeze the cooled potatoes well, add flour, egg, salt, nutmeg, oil and prepared spinach and knead the dough.
- From the dough obtained on a floured board, form rolls and then cut out the gnocchi. Cook in salted boiling water until they float to the surface.
- Put the cream in a deeper pan, add the white pepper and and cook briefly. Then stir in the grated cheese and wine and continue to cook for 1-2 minutes.
Serving
Stir in the green gnocchi in the sauce and serve immediately with a grilled steak or fresh salad as desired.
Advice
Spinach should be chopped or strained as finely as possible.
