Preparation steps

  • Mix flour, salt, water and olive oil, then knead a homogeneous dough.
  • Knead the dough for a few minutes on a floured work surface.
  • Divide the dough into 10 parts of equal weight.
  • In a small bowl, mix the crumbled feta with the chopped mint leaves.
  • Take one part of the dough, roll it out slightly, put a teaspoon of the filling, and close everything in a bowl. Clap your hands a little, then turn so that the joined side is down. Sprinkle the work surface with flour, place the dough and lightly roll over the dough several times to get a circle. Be sure to sprinkle flour on the work surface before each roll.
  • Do the same with the remaining dough and filling.
  • When you have prepared everything, heat the oil in a deep frying pan and fry the dough no more than two pieces at a time.
  • Roll the fried pies on a plate on which you have placed a kitchen towel.
  • Serve them warm immediately.
