Grandma Schiller cake
Schiller, prepared by my grandmother regularly for my childhood birthday, which is why she got an honorable place in the title. For me, it has held the first place on the list of favorite desserts for many years.
Preparation steps
- Making this beautiful cake begins with the preparation of the first biscuit. To begin with, butter, sugar and egg yolks need to be foamed. Melted chocolate, almonds, baking powder, and, finally, egg whites and crumbs are added to this mixture. This is the ‘main’ biscuit which, once baked, is cut into two pieces.
- The second biscuit, which is also the sweetest part of the cake, is prepared by adding sugar to the beaten egg whites, stirring briefly until the sugar melts, and finally lightly mixing the almonds and crumbs. It would be good if both biscuits and cream stand overnight before the final 'joining' of the cake, it's so much finer for me, but it's not necessary.
- The cream is made on steam. We beat the egg yolks and sugar until we get a compact mixture. Then we add black coffee (I also add a little melted chocolate for color), flour or thickener, and after the cream has cooled, and butter.
- This is followed by stacking the cake. The second biscuit goes between the first one, with each layer being filled with cream, and I previously soaked each one with rum. For me personally, this amount of cream is a filling for the filling and coating of the whole cake, so if necessary, the mixture can be slightly increased.
