Grandma graham bread
For my favorite integral women :-) She will be recognized ;-) The way grandma does it… knead one big one and pop it for a couple of days.
Preparation steps
- Mix corn flour with dry yeast, heat milk with honey and steam the flour.
- Mix graham flour with salt, add fat and oil, cornmeal mixture (still hot), add warm water as needed and knead a soft dough. It should be beaten for a long time and beaten well :-)
- Put to rise for about an hour… squeeze out the air, mix lightly and put to rise again for about half an hour.
- Knead again, flour a large baking tray, shape into a round loaf and place it on the baking tray, cover with a cloth and rise for about 20 minutes.
- Bake in a hot oven… if desired, coat while still hot with a little fat, wrap in kitchen towels and leave to rest. Enjoy :-) I like it the most alone, with a glass of white wine and possibly cubes of hard cheese or spicy, homemade ‘prgica’, mmmmm…
