Gougere with a ham
Gougere is a salty version of sourdough that is most often associated with princesses in our country. But these salty cousins of hers are also extremely delicious and equally popular. In this case, the dough is made the same as for the princesses, except that at the end it is gogn grated cheese and chopped ham, and the art of baking the dough is fried. These tender and delicious balls are most beautifully served with tartar sauce.
Preparation steps
- Put water in a cooking pot, then add butter, sugar and salt, cook until the butter melts and the liquid boils. Add both flours and cook, stirring, until a ball of dough is formed. Remove from the heat and cool a bit, then mix the eggs one by one, but the next only when it is completely mixed beforehand. Finally, mix in the ham and cheese.
- In a deep bowl, heat enough oil to allow the balls to rotate smoothly. Using an ice cream spoon or an ordinary spoon, grab the dough and dip it in hot oil, fry them until golden yellow, then transfer them to paper towels to drain off the excess oil.
- Transfer the drained gougeres to a serving plate and serve warm with tartar sauce.
