Gobi Pakora with Mango chutney

Preparation steps
- You can prepare mango chatney the day before, otherwise well sealed in a glass jar can stand up to several days in the refrigerator. Put sugar and vinegar in a saucepan and mix for a few minutes until the smell evaporates. Then add mango and other ingredients and cook for about half an hour, stirring occasionally. The mixture should not be too thin or thick.
- Put cleaned and cut cauliflower in boiling salted water. Reduce the temperature to a minimum and leave for 15 minutes. Drain well. Put all the ingredients in a bowl and gradually add water until you get a mixture that is not too thick. Heat the oil, dip the cauliflower well in the mixture and fry until it gets a golden brown color. Finally sprinkle with plenty of fresh coriander to serve with mango chatney and rice as a side dish.
