Gentleman's stew

This recipe is a variation of several different recipes from which I extracted what suits us and got this delicious dish.

Preparation steps

  • Cut the meat into small cubes, fry in oil for 2-3 minutes so that all the juices remain inside. Grate the onion on a fine sieve, remove the meat from the pan to the side and add the onion and minced red pepper and simmer briefly. After a few minutes add the meat to the onion , grated carrots, crushed garlic and grated prunes, bay leaf and cover with 3 dcl of water. Simmer for an hour, then season with salt, pepper, vegeta, rosemary, tomato sauce, jam and wine. and cook until the meat softens. In the last 15 minutes before the end, add the gnocchi to cook in the juice.

Serving

Serve with gnocchi or some potatoes and eat.

The sweetness corresponds to the venison. That is why sweet and sour cranberries are most often served with game dishes, while dried, slightly sweet plums instead of cranberries will ideally round off the taste of this refined dish in venison stew.
