Preparation steps

  • Put the rice in a pot, pour over a little milk and cook on low heat. Stir several times so that the rice does not stick to the pot and add milk a couple of times. After 15-20 minutes, when the rice is cooked, add the egg yolks, which we frothy with the sugar and grated lemon zest, and cook for another 2-3 minutes. We add gelatin, which we previously soaked with 5 tablespoons of water to swell. Stir well to dissolve the gelatin. Remove from the stove and cover, so that no crust is formed. Allow to cool.
  • Fresh fruits are washed, cleaned and cut into smaller cubes. If we use berries, leave them whole.
  • Stir in the whipped cream and add it to the rice milk. Add more fruit and mix gently. Pour the mixture into a 34x11 mold, which is lined with transparent foil. Arrange the biscuits on top, close with foil and place in the fridge to allow the mixture to cool and harden.
  • When well cooled, turn it over on a tray so that the biscuits are underneath, cut it into thicker fetishes and serve.
