Frittata with red chicory and feta

I love chicory, because of its bitter taste. Chicory is very useful for digestion. It is also rich in folic acid and potassium, helping to eliminate toxins from the body.

Preparation steps

  • Preheat oven to 200 degrees. Finely chop the onion and fry it in a pan with olive oil over low heat, taking care not to burn it. Add the chopped chicory to the strips and simmer over a high heat, stirring constantly, until the chicory softens nicely. Add salt and pepper.
  • Beat eggs with milk and chopped parsley, salt and pepper. Stir in the small diced feta and stewed chicory.
  • Oil a pan suitable for baking, shake out the mixture and bake in the oven until the egg is cooked and the frittata gets a golden color (you can also turn on the grill function for the last few minutes if you have one).

Serving

It is good both hot and cold. Serve it with a salad of your choice.
