Fried veal steaks and zucchini zucchini
As unparalleled fans of breaded and fried dishes, of course we have breadcrumbs on the menu much less often than we would like. Because, then they would gain weight, meals would become everyday and thus unpopular. But when it is their turn, then there is no restraint.
Preparation steps
- Lightly beat the steaks with a meat mallet (over cling film or a freezer bag), place them in a deeper bowl and pour mineral water over them. Let stand 2h.
- Wash and peel the zucchini and cut them into sticks like when you make french fries. Add salt and pepper and put in a strainer.
- Put sifted flour with baking powder in a bowl, add salt, egg yolks and oil and knead a smooth dough while gradually adding beer. Make a solid snow of egg whites and mix into the beer batter, along with the chopped sage.
- Drain and dry the steaks with a napkin, salt and pepper them. Put flour in one shallow plate and breadcrumbs in the other. It would be a good idea to at least keep that second plate right next to the pan in which the steaks will be fried.
- Heat the frying fat in a deep frying pan or deep fryer to 180ºC. There are several methods to check the temperature for those who have neither a fryer nor a special thermometer, or have one but do not know where it is located. Add a drop of water, if the temp evaporates immediately. is suitable; insert a piece of bread and watch how it behaves or dip the handle of the cooker - if bubbles of temp immediately form around it. has been achieved. Whatever it is, just don’t check the temperature with your finger.
- Roll one steak at a time into the flour and then into the breadcrumbs and quickly transfer to the heated fat. Fry for about 3 minutes, turn carefully with a wide spatula and continue frying for another 3 minutes. For the second steak, add a little frying dough to the plate, and heat the fat again before placing the steak.
- Roll the drained zucchini in the mixture for mashed potatoes, and in the remaining breading mixture. Remove them with a slotted spatula and fry briefly with one turn (about two minutes). Note: I did not follow the prescribed procedure for frying in deep oil, so my zucchini sticks did not turn out perfectly (half breaded). number of steaks, or make something fifth!
Serving
Serve with lettuce. Or with a spicy salad of cabbage and pepperoni. Depending on the size of the steaks, feel free to sit another one or two hungry people at the table.
