Preparation steps

  • This way, this treat is very easy for me to prepare because we have a ready-made mixture of tempura flour (a mixture of wheat, rice and starch flour) in Asian stores. For those who still want to try this recipe, I looked for a reliable recipe (from Johann Lafer’s book) on how to prepare tempura. I will first outline the procedure for the "simpler" version.
  • Mix tempura flour with 125ml of water, sugar and salt into a smooth mass. Add coconut and sesame seeds and combine everything nicely. If necessary, add more water or flour, the mass should be a little thinner than for donuts. Cut the bananas into approx. 2 cm rings. Heat the oil in a wok at (165-170 ° C, or when you dip the handle of a wooden spoon into the oil to see small bubbles rising along the edges of the spoon). Pass the bananas through the dough and fry in oil until golden brown. Remove to a paper napkin to remove excess grease. Drizzle with honey before serving. Serve warm.
  • TEMPURE PREPARATION
  • Weigh and prepare all ingredients. Sift flour and starch and mix with salt. Whisk the egg whites lightly and whisk in the flour with a whisk. Add ice-ice water * while mixing with a whisk and combine everything into a smooth dough. In this case, add only one tablespoon of coconut instead of 5.   • * The colder the tempura dough, the crispier it will be after frying. Half of the water can be replaced with ice cubes, which gradually melt in the dough and keep it at a minimum temperature.
