Preparation steps

  • Biscuit:
  • Beat the egg whites into a stiff batter with the stevia pulverized.
  • Using a spoon, lightly stir in the baking powder mixed with the cocoa and coconut flakes.
  • Place in a pan on baking paper. Bake at 180 degrees Celsius for about 20 minutes.
  • Cream:
  • Melt the forest fruit over a low heat and chop with a stick mixer or blender.
  • Mix the fruit and mascarpone into a uniform cream.
  • Spread the cream on the biscuit and roll it up and put it in a narrow protvan (like the one for bread or venison loin - cut off the ends if it is too long). Refrigerate for 2-3 hours.
  • Lining:
  • Mix the cream into the whipped cream, take out the cake, transfer to a tray and coat with the whipped cream, and grate a crumb of dark chocolate on it.

Serving

Elf is ideal as an everyday cake with afternoon coffee ...
