Fish in salt
Fish in salt is a specialty of Mediterranean cuisine and in this way sea bream, sea bass and dentex are most often prepared! They say that fish swim three times in the sea, in oil and in wine, and sometimes they dive into pure salt :)
Preparation steps
- Clean, wash and dry the fish well.
- Cover the baking tray with a 1 cm thick layer of salt. Place the fish in the tray prepared in this way and cover it with the rest of the salt in which you have mixed the beaten egg whites. Make sure that the fish is completely covered, because this layer protects the surface from the direct heat source, so the fish is evenly baked.
- Bake in an oven preheated to 190 degrees C for about 45 minutes. When it is baked with a knife or a cooking hammer, break the mold, take out the fish and coat it with olive oil to make it shine.
- For the marinade, chop the garlic and then mix it with the olive oil and finely chopped barefoot see picture.
Serving
Serve boiled potatoes, chard and marinade as a side dish. Pleasant
