Fast hake
I am a fan of fast and healthy meals. This recipe is a great meal after you get back from work and you want to prepare a quick lunch / dinner.
Preparation steps
- Defrost the hake fillets. First, fry the finely chopped red onion in olive oil. When it softens add the chopped garlic. As soon as the garlic releases the smell, add the hake and simmer lightly. I often cover up and let the fish soak up their water. Season with salt and pepper and add the rosemary. When the water runs out, let it fry a little and then cover it with wine. Allow the wine to evaporate over low heat.
- For the side dish, I prepared mashed potatoes and a salad of chickpeas, chia seeds, lettuce, carrots and pumpkin oil (seasoned with salt, pepper and lemon juice).
