A roulade that melts in your mouth. There is little to describe how delicious this roll is, it must be experienced. I liked the look of the yo-yo roll, so I put whole mandarins in a roll in the same way in the original recipe, the mandarins are chopped and spread over the sweet cream and then everything is rolled. You can instead of tangerines raspberries, strawberries, currants.
Preparation steps
- Turn on the oven to preheat to 160 - 170 degrees.
- Line an oven tray with baking paper.
- Cut another sheet of baking paper and sprinkle with sugar and set aside.
- Separate the egg whites from the yolks. We can prepare scrambled eggs from egg yolks (fry 1 onion, maybe meat bacon and not a little olive oil, then add egg yolks, season and fry briefly).
- Beat the egg whites and lemon juice well, then add sugar little by little and mix shortly after each addition and mix into a firm sauce. Lightly stir in the hazelnuts, lemon zest and maize.
- Slowly fill the decorating bag / syringe with the resulting mixture and slowly squeeze the horizontal lines / stripes next to each other. Sprinkle with chopped hazelnuts on top and then put in the oven in a preheated oven for about 20-25 minutes or until lightly browned.
- Turn the baked crust over on the already prepared baking paper, which we sprinkled with a little sugar, then slowly wrap the crust with paper, then unwrap it again and let it cool through on the baking paper.
- Coat the cooled crust with a dozen cream of sweet cream and set aside a little for decoration. Spread the cream richly with the chopped mandarins or arrange the whole mandarins on the edge as shown in the picture, then roll everything with paper and then remove the paper.
- Cool the roll before serving in the refrigerator for 2-3 hours.
