Fagottini stuffed with homemade cow curd in fennel sauce with black truffle
This dish is actually very easy to prepare. The most important thing is to have quality food. Be sure to try homemade cottage cheese, because cottage cheese combined with truffles will make this dish an incredible gastronomic pleasure. If you do not have fresh black truffles, you can omit it because the butter with truffles will contribute to the unique aroma that this dish will give you.
Preparation steps
- Knead the dough from flour and eggs. Add water if necessary. Roll out the dough thinly (make square shapes).
- Put the curd (which we previously seasoned with pepper, salt, egg and grated black truffle) in the middle of a square dough, then spread the egg on the edges of the dough, and gradually lift them (to get the shape of a pyramid, or bassoon).
- We put the bassoons in boiling salted water. Fry finely chopped fennel in olive oil, and add the stock (of vegetables) until soft. Season to taste. Put the cooked bassoons in the resulting fennel sauce, add the truffle butter, grate the fresh black truffles and serve warm.
