Endive with hot potatoes
Although I love all salads, endive was not among my favorites until I tried it here in Styria, prepared this way… ..
Preparation steps
- Boil the potatoes in their skins, peel them and cut them into slices.
- Cut and wash the endive.
- In a bowl, mix the sliced endive with the potatoes, squeeze the garlic, add salt, vinegar and pumpkin oil, mix well.
Serving
Serve as a side dish to a meat dish or with black bread or pastries as a main dish.
