As you know, I currently live in America and meet people from all over the world. One of them is a girl who goes to school with me, and she is from Somalia. On one occasion she brought me their traditional dish to try and I was thrilled. This recipe is a mix of hers and mine :) I hope you like it too, I'm just sorry that I can't transfer the taste to this page :) Pozz everyone

I don't make them often, but when I make them they disappear in the blink of an eye. The dough is fantastic and is suitable for different fillings.

Empanada is a pad of dough filled with stuffing, and they differ from country to country in the way they are prepared, especially in the type of stuffing that can be both salty and sweet.

While looking for a fasting snack, I came across various variants of this specialty… There were no fasting ones, but the dough met the criteria…. A small combination of favorite ingredients created crispy and delicious empanadas.

These days, I've been cooking a lot according to Jeka's recipes and with what gusto. One recipe better than another; quick lunches, healthy snacks, delicious desserts! Now it would be my turn to treat her to a quick, healthy and tasty recipe. Inspired by the 'Spring Playoffs', I decided on a combination of vegetables and wholemeal flour ... and we will make pies and crusts on another occasion;)
