Egg on the eye in a new guise or Moonstruck breakfast

Many years ago I watched the movie Moonstruck and in one scene my mother was making an egg on her eye for breakfast. I liked the idea, so I tried it and worked on it a bit.

Preparation steps

  • Cut 4, finger thick slices of bread
  • Carve out the middle
  • Fry the middle of the bread briefly on both sides, without adding fat
  • As soon as you take it out of the pan, coat the surface with garlic
  • Put a little olive oil in a frying pan and on it the red pepper cut into strips, garlic and hot pepper and fry on a medium heat until the red pepper softens. If you don’t like hot peppers, throw them out of the recipe
  • Remove the paprika from the pan and cover it with cling film
  • Put hollow bread on the oil in which the paprika was baked and break the egg in the middle, and lightly salt it. While placing the bread and eggs, I recommend that you reduce the heat so that the eggs do not bake too quickly, and then return to a medium heat
  • When the egg whites are white from the bottom, turn the bread over and bake for another 40 seconds
  • All you have to do is serve everything nicely on a plate. Good apetite! :)
