Dukan chocolate muffins with raspberries

Quick tasty muffins with chocolate filling. I chose raspberry extract but you can combine it with any extracts :) Whatever suits you.

Preparation steps

  • Separate the egg yolks from the egg whites. In a bowl, beat the egg whites with a little salt until solid snow is obtained.
  • In another bowl, mix 2 egg yolks with cocoa, then add the other ingredients and mix well. Gently whisk the mixture with the egg whites.
  • Put baskets and one tablespoon of the mixture in the muffin tin. In a preheated oven at 180 put the muffins to bake for 5-6 minutes.
  • Pudding:
  • Mix the egg yolk with the stock and cocoa. Add a little milk and sweetener. Put milk in a pot to boil, then remove from the heat and stir in the mixture. Return to the heat and cook until thickened.
  • Take the muffins out of the oven and add one teaspoon of pudding and the rest of the mixture.
  • Return to the oven and bake for another 15-20 minutes until they are baked.
  • Cream:
  • Mix the rest of the pudding with the Greek yogurt.
  • When the muffins are done, coat them with cream and leave to cool.
