Dukan asparagus muffins
Finally asparagus! These beautiful wild shoots have a noble taste, full of vitamins and minerals and very low in calories. Here is a recipe for the 2nd Dukan phase. Good only to all Dukanice and Dukanice!
Preparation steps
- Shred the asparagus to the hard part into smaller pieces. Steam until slightly softened (approx. 5-6 minutes)
- Mix eggs, lean cheese, oatmeal. Add salt and pepper to taste.
- Add the asparagus to the mixture.
- Arrange the asparagus mixture in a muffin tin. Coat it with paper molds so you don’t have to use grease to keep the mixture from sticking.
- Bake on a medium rack for 30 minutes at 200 C.
- Take them out of the paper molds when they have cooled a bit and serve immediately! Great ones are warm, but cold ones aren’t bad either!
