Preparation steps

  • In one bowl, grind the yeast with 1 tablespoon of flour, 1 tablespoon of sugar, about 1/2 dl of milk (from 1 / 2L). Leave to rise for about 20 minutes
  • Mix all other ingredients 0.45l milk, 0.2l oil, egg yolks, rum, 5 tablespoons sugar, vanilla sugar, lemon zest together.
  • Put flour with a little salt in a larger bowl. Make a recess.
  • Put the risen yeast and wet ingredients in the flour. With the spiral attachments on the mixer, first start at a lower speed and continue to increase the speed and mix until you get a smooth ball.
  • Using a little oil on your hands, transfer the dough to a larger, clean, pooled (lightly with your hand) bowl, preferably one that you can seal. Allow the dough to double. You usually break the lid.
  • Transfer the dough to a floured surface, mix several times (the less, almost do not knead, it will be fuller, if you knead a lot and loosen they become hollow) and roll it to a thickness of at least 1.5 cm (I take a centimeter). You can take a donut mold or whatever you want, you can also use a cup, which you will put in the flour first and then on the dough. I have a flower mold the width is 6 cm, but when they were baked it was not very visible.
  • Stir the restlins again, but by hand, roll out and cut again. Finished cover and leave to rise for at least half to an hour.
  • In a bowl with a thicker bottom (to heat evenly), heat the oil in which you will put 1 tablespoon of brandy so that the donuts do not absorb a lot of fat and 2-3 grains of salt (really not more) so that you do not spray the oil. then wait a bit or add a little cold oil. When it starts to spread the circles slightly you take the cut circles of dough and put in hot oil on the reverse side of the one as it rises (the floured side comes up on you). Unfold and turn the donuts for 2-3 minutes, but no longer match them with the lid.
  • Take them out with a hollow spatula and put them in the bowl in which you put the paper towel.
  • Fill them with apricot jam, nutella or as desired. I have a syringe and I pierce them from the side and fill them.
