Dinner for two "Claudius Galenus"

Seduction is an art and a sensual enjoyment. Of all the seduction techniques, only a deliciously prepared meal can trigger all the senses. The famous Greco-Roman anatomist Claudia Galen and the personal physician of the Roman emperor Marcus Aurelius studied the senses and food. European women paid for his aphrodisiac recipes with gold. Today, 19 centuries after Galen's existence, the essence of his theory has been reduced to a simple saying: "The path to a man's heart, leads through his stomach!".

Preparation steps

  • Preparation of tartal dough: From flour, salt, butter and egg yolks knead a hard tartal dough. Shape the dough into a ball, wrap in cellophane and leave it in the fridge for 40 minutes.
  • Salad preparation: Peel a squash, cut it in half, remove the seeds and cut it into oblong pieces. Heat the oil and fry on each side. Sprinkle the fried zucchini with chopped garlic, add salt and balsamic vinegar. Arrange the salad prepared in this way on a plate and arrange the cooked chestnuts over it.
  • Preparation of mushrooms: Separate the handles from the hats from which the top layer should be carefully removed. Wash the handles and chop finely.
  • Preparation of the filling for the tartals: Chop the mushroom stalks and fry in oil, stirring constantly, until the juice they have evaporated evaporates. Then remove from the heat, add sour cream and mix with a spoon until well combined
  • Preparation of mushroom side dishes: Arrange the caps evenly in the bowl in which they will be baked and fill them with moldy cheese. (Bake together with tartals.)
  • Preparation of tartalin: Take the dough out of the fridge and roll it out with a rolling pin as thin as possible. Using a tartalin form, take out the dough and press it into the form with your hands. Arrange the ingredients on each tartal in this order: a slice of boiled pork neck, filling for tartalins and finish with another slice of boiled pork neck. Preheat the oven to 200ºC, put tartalines on the upper rack and mushrooms on the lower one. Bake for 15-20 minutes until the tartals get a slightly yellow color.
  • Preparation of salty foam for tartals: Whisk the egg whites with salt. Take out the tartals and put the whipped egg whites in the shape of a large ball on each one. Return to the oven and let it bake for another 5 minutes, until the sauce gets a golden color. Remove from oven and serve. cross section of stuffed tartal
  • NOTE: If you do not like moldy cheese, you can replace it with plain Trappist. Chestnuts are not mandatory, but the salad is much tastier with them. Red wine goes great with this dinner.
