Delicious potato pasticcio

Preparation steps
- Peel an onion and cut it into not too thin slices. Peel a squash, grate it and slice it. Cut the pancetta into cubes.
- Heat the oil in a pan and fry the potatoes stirring constantly so they don’t burn. When the potatoes are slightly browned add the onion and bacon, cover with a lid, reduce the heat to a minimum and simmer for 8 minutes.
- Dissolve the saffron in 1/2 cup of warm water and add to the pan with the potatoes. Cook further without the lid, over medium heat until the potatoes are cooked through. Eventually let almost all the water evaporate.
- Beat the eggs a little and add them to the potatoes, salt and pepper to taste, and bake while stirring with a wooden spoon. Add a little chopped parsley leaf, and serve the pasticcio warm with the salad as desired.
