Dalai Lamini Momoi
This recipe is from Tenzin Gyatso, the 14th Dalai Lama.
Preparation steps
- File:
- Cook and mash the potatoes. Leave it to cool. Heat the oil in a wok and fry the onion for 5 minutes to soften. Add the mushrooms and cook for another 5 minutes. Leave to cool, then add cheese, coriander, salt and pepper.
- Testo:
- Knead a smooth dough as for any paste. Stretch and remove the circles with a mold. (If using a pasta machine, roll out the dough to a thickness of 4). Roll the dumplings as in this video (there the dough is square, maybe so). This is what mine looked like.
- Steam in a steamer for about 15-20 minutes. If you don't have a sitimer in the sherpa, boil the water, then put a sherpa with a perforated bottom in it so that the bottom is not in the water, arrange the momoe on it and cover.
- Shed:
- Heat the oil in a wok, add the chopped onion and cook until soft. Add tomatoes and coriander and cook for another 5 minutes. Stir the soup cube into the boiling water and place in the sherpa. Bring to the boil and simmer with the onion and tomato for another 15 minutes.
- In addition to soup, it can be eaten with soy sauce (picture).
- * The original contains yak milk cheese. It is similar to parmesan in texture, so you can replace it with some other hard cheese. I put cheese with 54% dry matter.
