Croquettes with prosciutto and onion
Fine potato croquettes with the addition of prosciutto and spring onions. They can be served on their own as an appetizer with a dip, or as a side dish to a main course
Preparation steps
- Add finely chopped onion and prosciutto to a pinch of butter,
- Add egg, butter, stewed prosciutto and onion, parmesan salt, pepper and flour to the hot mashed potatoes. Combine everything finely and let it cool down a bit.
- Make sausages from this mixture and cut them into sticks, if they are nice, sprinkle the surface with flour
- Now bread the croquettes as standard, I always add a little milk to the egg, and I mix a little flour in the breadcrumbs. Put them in the fridge for an hour now.
- Fry the croquettes in deep oil until golden brown
- Serve them as a standalone dish, in this case with a dip of cream, cheese, chives, salt and pepper. And it can be served as a side dish to a main dish
