Cream pancake cake - a new variant

I saw several variants, the basic recipe for pancakes is the same, but the little thing - jam - changes everything :))

Preparation steps

  • Whisk with a mixer egg yolks, 4 tablespoons brown sugar and vanilla sugar, add softened butter and stir, add flour and milk alternately, whisk to avoid lumps
  • Whisk the egg whites with a little salt until stiff foam, add 4 tablespoons of powdered sugar and further whisk the image 1
  • slowly mix the beaten egg yolks and egg whites
  • pour the mixture into a Teflon pan with a spoon, with a little heated oil, spread it slowly (it must be helped, because in the beginning the mass is thick and does not spill), bake carefully so that it does not burn (only one side is baked), and transfer the first pancake to serving plate with baked side down “to slide off the pan” picture 2
  • we just sprinkle that first pancake with walnuts and sugar (because the jam would be very smeared with cream)
  • we transfer each next one with the unbaked, creamy side down (we “turn over” the pan, with the sincere hope that it will fall in the right place, if it doesn’t fall, we move it a little - it bakes :)), each time add a little oil to the pan
  • We spread jam on the baked side first, then sprinkle with walnuts and sugar (if the jam is sweet, don't sugar the walnuts, mine is sour) - it's convenient to have help with spreading and sprinkling, because you need to watch out for the pancake being baked - it's standard help for me " happy pensioner ”, who wanted this cake today, the middle generation is sleeping somewhere, and the granddaughter (because of whom I am a“ grandmother ”is small) picture 3 and picture4

Serving
