Cream-foam from semolina

It can be like cream - it can be like foam!

Preparation steps

  • For the foam, beat the sweet cream into a solid whipped cream. Boil the milk with the sugar and vanilla sugar. (If you want a fruity taste, add grated orange or lemon zest). Add a little salt. Boil semolina in hot milk, stirring constantly, and cook for a few minutes. Soak the gelatin in cold water. If you have decided on the fruity taste of the foam, drain the gelatin and dissolve it in orange or lemon juice. If not, dissolve it in a tablespoon of water and stir in the cooked semolina. Set aside to cool to cool well. Finally, stir in the whipped cream into the cooled semolina. Arrange the resulting foam in small molds and let stand for at least 4 hours in the cold. Serve with slices of filleted oranges or some other fruit (if you have chosen the fruit version) or with an addition of your choice.
  • For the cream Mix the milk and whipping cream, add the sugar and vanilla sugar and bring to the boil. Add semolina to the hot liquid and cook for 4-5 minutes. Pour hot into small molds and allow to cool slightly. Garnish with ground hazelnuts, walnuts, almonds, chocolate topping, cocoa or as desired.
  • It can also be used as a cream (filling) for a simple cake. Then mix the cooled semolina well and coat the biscuit.
