Couscous avocado salad

Preparation steps
- Put the couscous in a bowl in which to make the salad, pour hot water over it and let it stand for 10 minutes. After 10 minutes, go through the couscous with a fork and you will get a fine light couscous. Do not cut the avocado into small cubes, grate the carrots and finely chop the hard-boiled eggs. Mix all the ingredients (together with the hunting pepper or diced red pepper) with the couscous and season with salt and parsley leaves.
- Cut the lettuce into strips, season with pumpkin oil (or olive) and place the couscous with the toppings on the salad.
